Candied Walnut, Dried Fruit and Feta Salad with Caramelized Onion and Pear Vinaigrette

1 tablespoon butter
1 tablespoon brown sugar
1/4cup-candied walnuts (or any nuts)
1/4cup-dried fruits
3 tblspns- feta
Greens (preferably spring mix)
Half a Pear
Quarter of an Onion
1 tbspn dijon
2 oz Red wine vinegar
4 oz Olive Oil
Honey and salt and pepper to desired taste
In a medium heat non stick pan cook butter and brown sugar until smooth, add walnuts..cook for a few minutes until walnuts are coated. Transfer to bowl and add dried fruits and feta and toss.. let cool..
For vinaigrette: saute pear and onion until light brown. Cool. Transfer to Blender and blend til a paste, in same blender add dijon and vinegar. Blend together. Slowly add olive oil until thickened.. add salt and pepper to taste. Plate and enjoy.
